My Story

Hi! My name is Elysia Kramer, and I’m a baker from Fort Wayne, Indiana. I started baking many years ago, but over the past few years, I’ve focused solely on baking gluten and dairy free products that don’t taste like it! After learning my sister had a gluten intolerance, and later learning of my own allergy to gluten, I began my journey to bake gourmet desserts that not only were safe to eat, but also, actually taste good too! I’ve perfected my recipes over the past year and I recently started my own business, in hopes to sell my baked goods to people who have food allergies, but also deserve a sweet treat every now and then as well. I am a newly formed LLC, freelance baker, and I operate out of two separate health inspected, certified kitchens in South Bend and Fort Wayne, Indiana.
 

I believe that being gluten-free shouldn't mean sacrificing taste, so I use only the highest quality ingredients to craft my treats. I take pride in what I do and am always striving to improve and innovate. Thank you for choosing Thistle and Knead Bakery!
